Interestification

Interesterification involves an exchange of acyl group among triglycerides. Acyl groups may exchange positions within a triglyceride or among triglyceride molecules.

Catalysts

High temperature catalysts: KOH and NaOH

Low temperature catalysts: Sodium Methoxide (NaOCH3)
